No, you can't grab the piston with any kind of pliers. The piston has two little eyes the keys fit in. Someone told me that after I failed to replace mine. Will try again this summer when the weather gets warmer.

NV200 is nowhere near as comfy as the Connect or Promaster City. Awkward upright seating position and high center of gravity. Promaster City's 2.4 liter Fiat engine has some kind of design flaw, some of them burn oil hard.

This is normal for all manufacturers and there is a number of parameters it considers when deciding the S&S. The most likely moment it engages would be driving in nice moderate weather when there's no need for A/C and long enough stretches between stops to have the battery charged. The more load you put on accessories the less likely is the shutoff.
